Chef Brian Roland presents cool Cherry Tomato & Watermelon Gazpacho Shooters

Summer is here and its sometimes difficult to stay focused in the kitchen.  But I’ve created some fantastic recipes that will nudge you to make the extra effort!  The temperature outside seems hotter than ever, so this month I would like to share a delicious cold soup recipe.  Keep cool, stay refreshed, and enjoy the rest of summer!     Cheers!            ~Chef Brian Roland of Crave Culinaire

Chilled Cherry Tomato & Watermelon Gazpacho Shooters

Cucumber, Mint & Citrus Crème Fraiche

  • 1 pt                  Cherry Tomatoes
  • 4 Cups             Watermelon
  • ¼ Cup             Orange, Juiced
  • ¼ Cup             Lemon, Juiced
  • ¼ Cup             Lime, Juiced
  • 1 each              Cucumber, seedless
  • 1 Clove            Garlic, peeled and crushed
  • ½ each             Red Bell Pepper
  • 1 each              Shallots, peeled and chopped
  • 3 sprigs           Mint
  • 2 Tbl                Red Wine Vinegar
  • 1 oz                 Local Honey

 For the Soup: Combine all ingredients in a blender, and blend until smooth.  Adjust seasoning according to your taste.  The acidity or sweetness may need to be adjusted based on the potency of the garlic, and sweetness of the watermelon.
Citrus Crème Fraiche

  • ½ Cup            Crème Fraiche
  • To Taste         Salt and Pepper
  • 1 oz                   Honey
  • 1 Tbl                Orange, Juiced
  • 1 Tbl                Lemon, Juiced
  • 1 Tbl                Lime, Juiced

For the Crème Fraiche: Combine all liquid ingredients in a bowl and whisk together.  Slowly add the crème fraiche and lightly whisk, as to not over whisk it. Carefully spoon the mixture over the soup.
Garnish: Diced Cucumber, ¼’d cherry tomato pieces and a chiffonade of mint.
